Introduction
This puff has a crispy outer skin and a soft inner part, with a light and delicate cream filling. It is whipped using a mosa cream whipper and a n2o cream charger, making the filling even more fluffy and light, and melts in your mouth.
Prepare the materials:
· 250 ml whole milk
· 2 eggs
· 30 g caster sugar
· 1 packet of vanilla sugar
· 150 ml heavy cream
· 20 g icing sugar
· Liquid caramel
Steps:
1. Heat the whole milk in a pot. Beat egg yolks with sugar until the mixture is white. Add the vanilla sugar. Pour beaten egg yolks into hot milk and stir vigorously .
2. Heat the pot below 70 degrees until bubbles form. Add heavy cream. Pour the mixture into a Mosa Cream Whipper. Screw on 1 Mosa Charger and shake vigorously. Stay in the fridge for an hour.
3. Serve light and creamy custard on Puff using the Mosa injector tip.
